GFCF Sloppy Joe’s

Slowly, and I mean slowly, Zak took to this.  he is not the most adventurous kid and he is not big on any type of bread.  Even before the diet, we could not get him to touch the stuff.  Most times, I will use a GFCF waffle (I have found Vans to be the best) or Udi’s buns.  Try it open-faced on the waffle if you get pushback.

The great thing about Sloppy Joes is that it is versatile.  I have used this on buns, open faced on waffles, brown rice, GF pasta or just by itself.  Let the kids help make it – they will be invested in eating it, I promise.

Ingredients:

–          1lb lean ground beef or ground turkey
–          1 medium onion, finely diced
–          ½ green or red bell pepper, finely diced or put in food processor and pulse it till it is crushed (I do this for my family as they are not bell pepper fans)
–          1tsp minced garlic
–          1 cup GF ketchup (Heinz is GF)
–          ¼ cup GF mustard
–          1tsp GF Worcestershire sauce (Lea and Perrins is GF and made by Heinz)
–          Olive oil
–          Salt and pepper

Directions:

In a large skillet on medium high heat, add about 1tbsp of olive oil
Brown meat over medium-high heat about 4-5 mins
Stir in onion and bell pepper, cook another 2-3 mins
Add garlic, stir for 1 min
Now add all remaining ingredients
Cook for another 5-6 mins stirring to blend ingredients
Let simmer for a few more minutes, add salt and pepper to taste

Serve on GF hamburger buns or open faced waffles, pasta or whatever you like.  Enjoy.
